"Shepherd Pie" Cake

Texture, texture and texture! Since it's all about texture with my son's meals, I am always looking for new ways to incorporate all the good nutrients, every time he shows some interest in something. I have started to notice that he likes everything ''crunchy". I have tried to fry or bake some veggies, potatoes, plantains... hoping to find a texture he may like, with no success. If it is not '' crunchy", well he wants nothing to do with it . And when I say "crunchy", it's more like McDonald fries " fluffy-crunchy" LOL. How can I achieve this 'unknown ' texture? Can an Air-fryer be of a help? For nor now, I am thinking of a Panko bread crumbs coating. It will maybe give him the same feel and crunchiness, he is so looking for. That's how I came up with the recipe. I called it Shepherd Pie Cake but really, you can put everything you want in it.

You will need:

-3 medium golden potatoes -Vegetables ( broccoli, carrots, green peas) -1/4 cup of ground beef

-1 shallot

- 1 garlic

- pinch salt & pepper

-1 tbsp of butter

-1/4 cup of mozzarella cheese ( optional ) For the «breaded coat »

-2 eggs -1 cup of Panko Bread crumbs

-1/2 of all purpose flour ( coconut flour or almond flour)

-Corn oil to fry( or you can bake )

Cook the potatoes and veggies in boiled water. Once cooked, in one bowl mash the potatoes, add the vegetables, a spoon of butter and the cheese while hot; give it a good stir. In a greased pan over medium heat, sauté the garlic and shallot, add the ground beef, a pinch of salt & pepper and let it cook for 5 min. Pour the ground beef sauté unto the potatoes&veggies bowl, add an other pinch of salt & the pepper and mix everything. With an ice-cream scoop or your hands, form your patties, flour them, dump them in a beaten eggs bowl and cover them with the Panko Bread crumbs. They are now ready to be deep fried until golden and voilà. Bon appetit !
