May I present to you a Banana " Muffcake'' or "Cupffin'' recipe? I am not quite sure how to call it. Technically, it does not qualified as a muffin nor a cupcake, based on Google. For me, it is pretty close to a Muffin. Anyway for all I know, it is delicious and the "kidos" would love it ! Try it and let me know how you would call it. For six medium muffins, you will need:
Dry ingredients
-1 cup of all purpose flour- unbleached (or whole wheat if you'd prefer)
-1 tsp of baking powder
-1/2 tsp of baking soda
-1/8 tsp of salt
Liquid ingredients
-2 eggs
-1/4 cup of butter ( or margarine for a cheaper option)
- 2 ripe organic bananas
-1/2 cup of vanilla Greek yogurt ( or nature but then add 1 tsp of vanilla extra)
-2 tbsp of maple syrup ( for the ''sweet tooth'' readers)
In a bowl, mix the dry ingredients together. In an other one, mash the bananas, add the eggs , the melted butter and the yogurt. Pour the liquid mixture unto the dry ingredients bowl and mix it. If the cake batter consistency is too thick, add 4 tbsp of milk. With a big spoon, partially fill up the cups of a greased muffin tray. Finally, in a preheated oven at 350°F, place the tray and let it cook for 20-25 min et voilà. Be creative add in your mixture dried fruits , almonds, coconut flakes... all the goodies that your kids would love , Bon appetit !
